Cold weather go away!!! =( / Bad Jerky...

So I'm in CLT this week, and I woke up as usual at 6:40am ONLY to find out ...I WAS FREEZING!!! What in the world! so I turned around and slept some more!! haha...
I did eventually get up though, and when I walked outside, I realized that if I was cold inside the house, it was def gonna be freezing outside.  Didn't think about that, so I had to warm up my car for a bit before I could take off...my poor baby missed it's garage. (gagahge as Esteban would say. hehe) It sounded sad...

I can't believe my poor baby almost has 60k miles =( I was just talking to my coworker the other day, and saying "Oh yeah since my car is brand new....oh wait...it was 2007 wasn't..WOW IT'S 2010!!" LOL. harsh reality hit...It has been faithful though, and it still looks great, although it has to put up with all my hate comments =) 

On another subject, I went to go buy some stuff for Matt today, and I bought him some Jerky =) Well I saw the Walmart brand right next to it, and I was like, you know I've never tried it.... so I bought a small bag for me, along with Matt's regular jerky....

ALL I CAN SAY IS ......HARD!!!!!!!!!! holy cow!!! Brooke had told me that it got harder quicker...but I didn't think it was gonna be as quickly as WHEN YOU OPEN THE BAG!!! LOL...so memo to me.....never buy Walmart brand jerky!! =)

Yesterday I got to go celebrate Brody's Bday, we had a great time. I also got to make his cake, which by now if you follow me on Facebook and my site, you're probably pretty sick of it already..haha...but just one last time..HERE IT IS AGAIN!!! LOL

You know I'm a bit slow, but here I am with my new friends, and realized I have not taken ANY PICS with them!!! that will change soon...eitherway I was able to take some last night with the kids..it was fun.

Grace in small things...

So many things to be thankful for!!!

1. My credits transfered to FTCC!! which means I can start school =) Soo scared, but so cool!! =)
2. My caca was able to visit me!! I can't believe it's Sept already!
3. My awesome work out buddy Brooke. She keeps me going.
4. We're in the 40's!!!!
5. A week  a home to rest and have some "me" time
6. Yay for making cakes!!
7. So proud of myself for reading 4 books this Summer!!! I know some may think, pathetic, but hey...i usually read 4 books in like 20 years!! lol. seriously, it's sad...
8. A quiet morning
9. Cereal,  I don't know what I would do without it!
10. An awesome church!!! the past few Sundays have been amazing!!

Charity (aka Caca)'s visit to NC =)

This was a great weekend!! My Caca came to visit me, and we had a great time! She arrived on Thu night, and we stayed up till like 3am talking. =) She brought me some goodies too!! YAYS for make up, shirts, purses!! heheh...

The next morning, I got up and made some Chilean pancakes, and we filled with with White Chocolate and Raspberry..YUM!!! 

Definitely learned my lesson that 3 squirts of strawberry is WAY too much!!! lol. This shot was taken after i had drank HALF the cup and added more milk...it was still WAY SWEET AND PINK!!! LOL. 

Friday I pretty much spent most of the day making a cake..I was a bit frustrated cuz the fondant wasn't working with me, so we took a break and went shopping =) We came back around 6pm and I went back into it again..hehe...Caca watched a movie, and I listened to it..lol. 

CAKE IS WAS FINISHED FRIDAY NIGHT!!! =)

This is us lost while shopping...LOL. I absolutely HATE finding my car after shopping =(

I also made some empanadas for lunch =) YUM!!!

Sat afternoon, we got ready and left to Raleigh to the Cheesecake Factory =) YUM!! i got to meet 2 of caca's friends and we had a blast!!

HAD A BLAST!!!! THANKS CACA FOR COMING TO VISIT ME!!! LOVE YOU!!! =)

Ok, so I'm back for tonight....a lot has been happening, but I've been really lazy at blogging...I have got to get with it...

I'm so excited we're in the 40's with Matt coming home!!! =) I can't wait !!

Right now, I'm so excited though, cuz my Caca's coming to see me tomorrow!!!! I really hope that my work day goes by really REALLY fast, and that I can drive really REALLY fast..(carefully of course) so i can get home..hhe.. I get to watch HOUSE!! WAHOO!!! and by the time it's done..I'll have to pick up my caca at the airport!!! yays!!! Lots of fun coming my way..hehe...

I got to skype with Matt the other day it was AWESOME!!! =) I miss my baby so much, especially now that everyone's back =( but MY TIME WILL COME AND IT WILL BE SPECIAL!!! =) hehe.

OHHH OTHER BIG BIG NEWS!!!  My credits transfered to FTCC!! Praise the Lord!! I've been praying so hard so they would, so I won't have to take the classes again =) So far everything has transfered, except speech, I'm waiting... I'm gonna meet with my counselor on Tuesday so we can get my courses lined up =) SO FREAKING EXCITED!! I can't wait to begin school!! It's going to be soo different and new in so many ways, but I'M SO READY!!! I want to be a "somebody" as I tell Matt..haha...

I found some really cool songs to sing at church. I'm actually excited about them =) I hope i get to sing them soon. If not, then I'll get bored just singing them to me, lol, because I LOVE THEM!!! HEHE..

BIG CATCH UP!!

Ok so I haven't blogged in FOREVER!!! so I thought I'd catch up a bit...these past few weeks have been a bit crazy.... but of course I had to start with the best video EVER!!! lol.. I love it!! =) Matt does that to me all the time...(not the bread throwing...lol)

1. Still working on school...right now they are reviewing my school credentials to see if they will accept my credits....PLEASE PRAY THAT THEY WILL!!! =) I emailed last week, but they were still looking into it....I would just LOVE to start school this year =) and SPECIALLY if I don't have to take prerequisites!!

2. Traveled this past weekend to be in my best friend's wedding...found out I can actually make bouquets look pretty nice...LOL...and i got to make her bachelorette cake.  Too crazy weekend over all though.... I'm still trying to catch up on sleep.

3. Also got to spend some time with my old rommie from college Kim....we went to downtown Disney, and had dinner...i had a bbq hawaian sandwich....WOW IT WAS AMAZING!!! then we walked around a bit, and then went to the Ghirardelli shop and got some HUGE sundays....they were sooo yummy though!!! (stupid blurry camera though =(  )

4. I made my friend Brooke and her sister Sarah wait at the airport for like an extra hr cuz my stupid flight was delayed on the way home... =( but we caught up yesterday. =) no comments on that one though..LOL.

5. Still working from home this week...and I'm looking forward to my Mom and Sister coming over this weekend.. =) It will be fun =) I miss my nephew. My mom told me that he now says..CAKE...hahahha...so cute...

6.  Tomorrow we'll be in the 60's till Matt comes home!!! I'm getting so freaking excited!!!!!!

I went to Johnny Rockets...for lunch...and i got this really cute smile on my plate =) I thought it was really cute...UNTIL I GOT MY FOOD!!!!!!!!

honey mustard - tasted like melted honey with milk..GROSS
fries - mushy...another gross...

so i decided to get a milkshake to better my meal...i got an oreo...you can't ever go wrong with an oreo milkshake..OR SO I THOUGHT!!! it was so watery!!! GROSSS!!!! i gave it away to Regina's sister, cuz it was just discusting....well i get my bill and it only got better!!!

my meal = $4.00 (sandwich,fries)
my nasty milkshake = $4.79!!!!!!! WHAT IN THE WORLD!!!!!! I have NEVER paid that much for milkshake!!! i was furious!!!!!! so my dumb milkshake was actually more than my whole meal...GREAT!! so much for trying to save money..lol...
moral of the story....DON'T EVER EAT AT JOHNNY ROCKETS!!!!!!!! = GROSS!!!!!!!!!!!!!

WRONG WAY!!!

So last night my parents and I left our friends house around 12:15am...(This is the first time we've been to their house)  On our way home i was looking for I-95 North. ...I FOUND I-95N and took it!! only to find out that from exit 41, I was now on exit 33!!!! and not 49!!!!  =( of course i didn't notice, because we hadn't passed any other exits....I WAS FURIOUS!!! I couldn't believe that i did that!!...I COULD HAVE SWORN THAT I TOOK I-95 NORTH!!! 

So we had to turn around.... took us about 15 min to get to exit 41(where we started!!!) (going at 80mph of course..I wanted to get home)  and had to drive another 20 min to 49!!! Needless to say we made it home around 1am!!

Now that I think about it, it's pretty funny.LOL..but last night when i really wanted my bed..umm not so much....moral of the story...DON'T TRUST THE SIGNS!!! follow your iphone!!! hahaha.... 

Happy Bday to me =)

Today was very interesting, yet fun...i woke up at 630!!!! to work work out with my sis...GO US!!! hehe..then i THOUGHT i was gonna go back to bed, but nope...for some reason i stayed up...silly me..

Anyways, i worked on my cake decorating for my Bday cake and here is the result!!

TADA!!!! =) 

That stupid buttercream really gave me some headaches, but i was able to recover...it doesn't look as good as I would like it to be, but HEY.it's my first tipsie one =)

My friend Sheila called me, and they came over...they spent the whole day here, and it was a lot a fun (sorry no pics..) 

best part!!! I GOT TO TALK TO MATT ON SKYPE!!! WOOHOOO!!! =) I talked to him for about 45 min..it was heaven!! =) He also sent me some flowers..they were gorgeous!!

Then my fav dinner...PIZZA!!! hhehe...i love pizza!!! 

On a side note...we went to Michael's to buy Fondant, and Esteban disappeared but AN ELEPHANT-MONKEY SHOWED UP!!! heheh... =)

ME TIME!!!

So Matt told m I should have some "me" time. As if I don't have me time everyday :) lol. So I decided to pick up and drive 2 hrs to the beach! :) yes me and my lonesome self :) it was actually very relaxing :) I got to read some of my book. Got a little wet and quickly can out lol cuz the waves where crazy! Lol. But most of all I got some sun :) I don't know if you're gonna be able to see it since it's THE FIRST TIME this summer :( but its a little sun. Maybe I can make this a biweekly event :) (although parking was a nightmare) ALWAYS BRING COINS!!! lol. (I forgot) :)

Anyways. GREAT DAY OVER ALL!!! Now I'm ready to pick up my stuff and head home :).

Although in still having a hard time making the darn dark brown cream :( but the rest came out pretty good :)

6. My friends liked my cake the other day!!! It means so much more when it comes from non-fam :)

Today was kind of a bummy / depressing day....until I saw i had a comment on fb...

IT WAS FROM MATT!! 

It was the most amazing thing i could ever read!!! TOTALLY MADE MY DAY!!  =) (even teared up, cuz i miss him so much)
 It's so hard to talk to him sometimes, because everything has to be such short answers/non personal, and he just becomes almost another person =( But his message just reminded me WHY I married him, and WHY I love him so much!!

I'm so lucky to married to the best man in the world!!! hehe...I love it that he encourages me when i need it,  and always knows how to pick me up =)
I know it has only been two months and that we have a lot more to go...but each day it just reminds me how much I CANNOT WAIT to see him again!!!!! Please pray that the time flies by!!

Cake Nighmares...the sequel..

I was being stubborn and really thought that I could fix my cake with buttercream..I WAS WRONG!! =(
my attempt was a complete disaster..=( see for yourself..

The buttercream got stuck to the cake, and it pealed the cake by chunks as i was trying to smooth it out...NOT GOOD!!

So i attempted to TRY to fix it...of course only one side, because the other was disaster...PLUS i had my fondant ready already, so i had to use it..

so yes A TOTAL MESS!!! so it's destiny...

THE TRASH!!!!! =( 

better luck for the next time....I WILL NOT GIVE UP!!

Cake nightmares!!…

I am sooo glad I attempted to do this before my birthday, because it DEFINITELY back fired on me :(. IT LOOKS HIDEOUS!!!
What a nightmare!! It's like a horror movie!!! Hahaha.

Tomorrow we'll find out its final fate… can butter cream fix things???…will it be able to survive? …is my business in jeopardy!!!??

RECAP!!!

Ok i have been horrible at writing, I'm sorry =( so here's a quick recap of the past weeks..I'll try to keep it short..hehe

 My Third week of classes happened and I got to make my cupcakes =) Of course i didn't know that we were gonna use these colors, so the colors arent the greatest!! LOL. and of course i made the wrong buttercream ..so it came out YELLOW!!! lol...

Esteban got to go to the pool and ABSOLUTELY LOVED IT!!! bad thing was we didn't know there was gonna BE  pool!! so the poor thing ended up going in with clothes and all...heheh...i don't think he minded too much =)

Took Esteban out to Pizza Hut and here I caught him eating a chicken wing!! hahaha..he looked so funny!!! HILARIOUS!!!

MY FINAL CAKE!!!!!!!!!!! last week was my final class!!! I loved the class soo much!! i want to start my own business!! hehhe... no i really do though... 

YAYS!!!   I GRADUATED!!! HAHHAH...

I'm trying to find out what I'm gonna do to take my next class so I can still travel and work, but i haven't found a solution yet...I'm excited though..my next one is gonna be FONDANT!!! YAYS!!!

My next big invention will be my BIRTHDAY CAKE!!! WOOOHOOOO!!! i already know what I'm gonna make..i just have to figure out how to do it =) more pics to come...

Freezing!!!

Yes it is definitely 89 degrees today and going to be 95.…AND IM DRINKING HOT CHOCOLATE!!! I'm freezing!!! Bad thing about workin. In such big building that the temperature is ALWAYS 10 degrees less than what it should be!! Brrrrr.

On another note, I hadn't drank hot chocolate since like 6 months ago so YUM!!!! haha.

My second decorating class was yesterday, and I LOVED EVERY MIN OF IT!!!

I'm so glad God has allowed me to take this class, cuz it has helped tremendously!! as a stress reliever that is..hehe..anywho..I made a strawberry cake yesterday, and i was a bit upset, because the bottom of my cake got stuck to the pan, so it made a huge mess..
So i brought it to class and my teacher said it was still ok, that was good, so i cut it in half and filled it with rasberry jam..YUM!!!
Well i thought about taking pics through out my process...and I COMPLETELY FORGOT!! LOL..so here is the final result...I'll take more with a process on my next class :-)

Next week we get to do cupcakes...I'm thinking chocolate with manjar inside!! yum...

Well as if my day wasn't going crazy...i was on my way back home AND I GOT PULLED OVER BY A COP!!! :-( I was supposedly speeding...(which i know i wasn't...i was probably going 5 over) so he talked to me and asked me about my pill holder, and what i had...i told him advil and showed him..he said "why are they full of white powder" I said "I sometimes use pamprin in there..he said "PAMPRIN?"  i said yeah..uummm for menstrual stuff??!! HAHAH..I FELT SO STUPID...then he saw my cake and asked me if I had made it :-) needless to say i walked away with a warning only, and it was VERY NICE!! heheh...He was a nice cop...i like nice cops..hehe...

ps..i need to find new blog ideas, cuz my life just isn't that interesting..HAHAH...:-(

I began my Wilton's decorating class :) I was totally excited this afternoon and after my class I was even MORE!!! :) although I didn't get to decorate much cuz our class is PACKED!!! but it was SOO fun!!! I'm already looking forward to next week!!! :)
Sorry I don't have any pics yet, cuz like I said I didn't do much, but next week for sure!! :)

Today was a really rough day for me,so this class is definitely a big lifter upper :)

Matt changed his schedule and I'm LOVING IT :) cuz I get tio hear from him more often:) I can't believe were almost at the one month mark!! I hope this time flies by!!!!

More another day, cuz tonight I'm pooped!!! And my 2 cookies def won't help my weigh in on Friday :( blagh.

Thought for the Day :)

It's actually from Sundays message but really cool.

Everyone focuses on Jesus multiplying the 5 loaves and 2 fish. Although that is just awesome!!! Have we thought about what the boy felt? That was his only lunch, and if you could have asked him, could you feed 5000+ with this he would have been like. " Are you kidding me!"
However, he had faith! 2 things: ONE although what he had wasn't much, he knew that Jesus would MAKE IT WORK! TWO he had faith that although he was giving his all, he was going to be blessed in the end!

AND SO HE WAS!!! Tons of baskets were left over!

How many times do we look at ourselves and think. "what I have is not merely enough" whether it be financially or talents or just in general. But if Jesus was able to turn BREAD and FISH into thousands. What more could He do with us!!! And most importantly we should already know that although we may have to give our "all" for now, we will be blessed! Trust me God knows what He's doing :) and boy do we feel stupid when we go back and say "Ha, if I would have done it my way…I'm glad I didn't :)"

Sunday's message by Pastor Sean was AWESOME!!! So what i needed!!. His main topic was off of Romans, but he read this verse and it really hit me. It's when the disciples saw the blind man, and asked Jesus why he was blind, and if it was because his mother had sinned or because his father had sinned...This was Jesus' response:

John 9:3 - "Neither this man nor his parents sinned," said Jesus, "but this happened so that the work of God might be displayed in his life.

Ok so you may be thinking..yeah that's just a verse..heard it many times...lol..but take a closer look at the end.."this happened so that the work of God might be displayed in his life"!!! If he was nice and healthy now..how would the work of God be displayed???? Many times we complain so much about our "thorns in the flesh" but we tend to forget that God is in control. He has allowed us to have this  "thorn" so we can remember HIS WORK!! it's basically God saying..."I'm helping you to be humble, and allowing you to show MY WORK" :-) 


I know i struggle with the WHY'S in life..and I always think it's not fair...but if i take a closer look at my life...I think...would i be as close to God and dependent on His will as I am now?? If i could do everything on my own ...would i even take the time to ask??? Absolutely not..I really think my trials are what have kept me faithfully dependent on God....Also it has allowed me to say HE MADE IT WORK!! (HE SOLD MY HOUSE!! - he really did..my house was hopeless :-)) I know it's hard to say but we should all be saying THANK YOU GOD FOR GIVING ME TRIALS THAT HELPING ME STAY CLOSE TO YOU AND THAT SHOW YOUR AMAZING WORK IN OUR LIVES!!!!!! :-)

My attempt at experimentation!! LOL

Well it all started last week. I knew i had an event to go to yesterday. and I figured..ooo it would be nice if i could make some cheese empanadas!! So i asked my mom for some of the dough disks she uses, and she said she had a spare, and I could take it last Thu. when i left...WELL I FORGOT!!!!!
I looked everywhere in Fayetteville to see if they sold the darn disks..but no luck :-( I was really bummed out cuz i really wanted to make empanadas! Sooo i GOOGLED!! haha.. I found this recipe to make dough from scratch! I made an attempt on Tuesday and I made 2 and ...OMG THEY WERE SOOO GOOD!!
So yesterday I made the rest of the batch and I couldn't resist but to eat one..haha...but they were EVEN BETTER THAN ON TUESDAY!! haha...I was so proud. I'm good at following recipes, but sometimes, the food just doesn't want to cooperate! lol.  ...so here is the final result!

Needless to say everyone at my meet loved them too :-) YAY FOR ME AND EXPERIMENTING!!! haha
